Cheezy Kale Chips
Kale has gotten more and more popular over the years. Once relegated to the category of garnishment it has quickly moved in to the essential food category. Here is a favorite recipe of mine that will give you an option at the football party this weekend.
2 bunches of curly organic green kale
1 cup of raw cashews (soaked for at least 2 hours)
1 cup of raw sunflower seeds (soaked for at least 2 hours)
2 organic red bell peppers (remove stem and seeds)
1 cup of nutritional yeast
1/4 teaspoon of organic turmeric
1 teaspoon of Celtic sea salt or to taste
juice of one lemon
Wash and cut kale into bite sized pieces. Spin dry the kale and let the kale dry out as much as possible before coating. Blend all other ingredients in a high speed blender until you see a smooth thick batter. Transfer kale and batter into a large bowl and mix well using your hands to ensure the leaves are well coated. Place kale pieces on the dehydrator mesh tray. Dehydrate on 100 degrees for about 12 hours or until the coating is dry. ENJOY!
