Spinach Salad with Parsley Garlic Dressing
With summer around the corner, this quick tasty spinach salad and dressing will add a nicely fresh kick to your outdoor events, picnics, and get together with friends:
Ingredients:
4 cups of organic spinach
1 cup of mung bean sprouts
8 medium organic mushrooms, thinly sliced
½ organic red onion, finely diced
½ organic red pepper, finely diced
Place all ingredients in a large bowl and mix together. Mix in the parsley garlic dressing and serve
Dressing:
½ cup of raw sunflower seeds
½ cup of organic parsley
1 -2 organic garlic cloves, minced
1 cup of filtered water
2 tbsp of fresh squeezed lemon juice
1 tbsp umeboshi vinegar (ume plum vinegar)
1 tsp of nama shoya (fermented soy)
Sea salt and pepper to taste
Place all ingredients in a high-speed blender and blend well to obtain a creamy texture
